Easy "fried" Potatoes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter or 2 tablespoons margarine
  • 4 potatoes or 1 1/2 lbs potatoes
  • 1 medium onion
  • salt & pepper
  • paprika
  • 1 cup shredded cheddar cheese (optional)

Recipe

  • 1 wash potatoes & slice thin but do not peel.
  • 2 peel onion &slice thin.
  • 3 use 1/2 of the butter to grease a 3 quart casserole dish.
  • 4 fill casserole with alternate layers of potatoes and onion and the optional cheese if desired.
  • 5 sprinkle each layer with salt and pepper.
  • 6 the top layer should be potatoes.
  • 7 dot remaining butter on top. sprinkle with paprika.
  • 8 cover and microwave on high 20 minutes.
