Ingredients

- 2 small baking potatoes
- 2 tablespoons butter
- 1/4 cup light sour cream
- salt and pepper
Recipe
- 1 wash potatoes.
- 2 prick potatoes for baking.
- 3 bake in microwave until soft and cooked through (the time and power will depend on your microwave).
- 4 place cooked potatoes in mixing bowl, add all other ingredients, and mash with potato masher until at desired consistency.
