Smashed Potatoes (america's Test Kitchen)

Ingredients

  • Servings: 8
  • 2 lbs red bliss potatoes (skin on)
  • 1 teaspoon salt
  • 1 bay leaf
  • 4 tablespoons melted butter
  • 4 ounces cream cheese
  • pepper
  • chives

Recipe

  • 1 cover potatoes w/ 1" water. add 1 tsp salt. add 1 bay leef. bring to boil. cook to fork tender.
  • 2 extract 1c cooking water. drain potatoes. extract bay leaf. put potatoes in pot (to dry off).
  • 3 smash potatoe (use flat side of spatula or spoon to "squish").
  • 4 mix add 4 tbsp melted butter. add 4oz cream cheese. mix. salt pepper. add 1/4 c cooking water (or until desired consistency). sprinkle a bit of chive. add mixture to pot.
  • 5 fold.
