Liberian Sweet Potato Pone

Ingredients
- 3 cups grated raw sweet potatoes
- 1 cup molasses or 1 cup dark cane syrup
- 2 teaspoons ground ginger
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/3 cup vegetable oil
Recipe
- 1 in a 3-quart saucepan, combine all ingredients and simmer slowly, stirring constantly, for 10 minutes.
- 2 pour into well-greased 9-inch baking pan.
- 3 bake at 325f for 30 minutes, stirring up every 5 minutes for the first 20 minutes.
- 4 smooth down the top and allow to brown.
- 5 cut into squares and serve either hot or cold.
