Pumpkin Minestra

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 lbs french beans
  • 2 swede
  • 2 small vegetable marrows
  • 1/4 lb haricot beans
  • 4 garlic cloves
  • 2 tomatoes
  • 1 lb pumpkin
  • 2 potatoes
  • parsley
  • sweet basil (plenty)
  • 6 ounces cheese
  • 1 cup oil
  • saffron

Recipe

  • 1 chop all vegetables and boil together.
  • 2 when the water begins to boil add the oil.
  • 3 pound the garlic, parsley, basil a little of the cooked vegetables, cheese and saffron.
  • 4 add to the half cooked vegetables and cook until vegetables are tender, making sure not to over cook or burn.
  • 5 when ready serve with spaghetti and grated cheese.
