Pestatoes-pesto Mashed Potatoes

Ingredients

- 4 -6 medium russet potatoes, halved
- 3 tablespoons butter or 3 tablespoons margarine
- 1 garlic clove, minced
- 1/2 cup milk
- 3 tablespoons prepared pesto sauce
- 1/4 cup parmesan cheese
- salt
- pepper
Recipe
- 1 put quartered potatoes into a large pot.
- 2 add enough water just to cover potatoes.
- 3 bring to a boil.
- 4 boil for 20 minutes or until tender.
- 5 drain potatoes and return to pot.
- 6 add the butter, garlic, milk, pesto and parmesan and mix with hand mixer or potato masher until desired consistency is reached.
- 7 season with salt and pepper to taste.
