Pestatoes-pesto Mashed Potatoes

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 4 -6 medium russet potatoes, halved
  • 3 tablespoons butter or 3 tablespoons margarine
  • 1 garlic clove, minced
  • 1/2 cup milk
  • 3 tablespoons prepared pesto sauce
  • 1/4 cup parmesan cheese
  • salt
  • pepper

Recipe

  • 1 put quartered potatoes into a large pot.
  • 2 add enough water just to cover potatoes.
  • 3 bring to a boil.
  • 4 boil for 20 minutes or until tender.
  • 5 drain potatoes and return to pot.
  • 6 add the butter, garlic, milk, pesto and parmesan and mix with hand mixer or potato masher until desired consistency is reached.
