Rosemary Roasted Sweet Potatoes

Ingredients

- 2 lbs sweet potatoes, cut into 1 1/2 inch pieces
- 3 cloves garlic, chopped
- 1 tablespoon fresh rosemary, chopped
- 2 tablespoons olive oil
- 1/4 cup pine nuts
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
Recipe
- 1 preheat oven to 375ºf.
- 2 in a roasting pan or large baking dish, combine sweet potatoes, garlic, rosemary and olive oil.
- 3 roast for 45 minutes, mixing occasionally.
- 4 just before serving, add pine nuts, parsley and salt and pepper.
- 5 serve hot.
