Potato Spinach Casserole

Ingredients
- Servings: 8
- 6 -8 large potatoes, boiled and mashed
- 1 cup sour cream
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped chives or 2 tablespoons green onion tops
- 1 (4 ounce) jar pimentos
- 1/4 cup butter or 1/4 cup margarine
- 1 (10 ounce) package chopped spinach, thawed and drained
- 1 cup shredded cheddar cheese
Recipe
- 1 combine all ingredients except cheese in large bowl.
- 2 spoon into greased 2 quart casserole.
- 3 bake uncovered at 400 degrees for 15 minutes.
- 4 top with cheese and bake 5 more minutes.
