Potato Spinach Casserole

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 6 -8 large potatoes, boiled and mashed
  • 1 cup sour cream
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped chives or 2 tablespoons green onion tops
  • 1 (4 ounce) jar pimentos
  • 1/4 cup butter or 1/4 cup margarine
  • 1 (10 ounce) package chopped spinach, thawed and drained
  • 1 cup shredded cheddar cheese

Recipe

  • 1 combine all ingredients except cheese in large bowl.
  • 2 spoon into greased 2 quart casserole.
  • 3 bake uncovered at 400 degrees for 15 minutes.
  • 4 top with cheese and bake 5 more minutes.
