Ingredients
- 2 tablespoons butter
- 2 tablespoons flour
- salt
- 1/4 teaspoon pepper
- 1 1/2 cups milk
- 1 cup grated cheddar cheese
- 6 medium potatoes, cooked and mashed
- 1/2 cup hot milk
- 3 tablespoons butter
- paprika
- parsley sprig
Recipe
- 1 blend butter, flour, 1/2 teaspoons salt, pepper and milk in top of double boiler; cook until thickened, stirring constantly. fold in cheese; stir until melted. keep hot. beat hot potatoes with milk, butter and 1/4 tsp salt until fluffy. heap into greased, shallow casserole; form a crater in center. pour cheese sauce over potatoes. broil until browned. sprinkle with paprika; garnish with parsley.
