Million Dollar Potatoes

Ingredients

- 6 medium baking potatoes
- vegetable oil
- 1/2 cup butter or 1/2 cup margarine, softened
- 2 cups shredded cheddar cheese
- 1 (8 ounce) carton sour cream
- 1/4 cup milk
- 1 teaspoon chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 wash potatoes, and rub with oil.
- 2 bake at 400 degrees for 1 hour or until done.
- 3 cut potatoes in half lengthwise.
- 4 carefully scoop out pulp, leaving shells intact.
- 5 mash pulp; stir in butter, 1 1/2 cups cheddar cheese, sour cream, milk, parsley, salt, and pepper.
- 6 stuff shells with potato mixture and sprinkle with remaining cheese.
- 7 bake potatoes at 350 degrees for 20 minutes.
