Million Dollar Potatoes

Total Time: 1 hr 50 mins Preparation Time: 1 hr 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 6 medium baking potatoes
  • vegetable oil
  • 1/2 cup butter or 1/2 cup margarine, softened
  • 2 cups shredded cheddar cheese
  • 1 (8 ounce) carton sour cream
  • 1/4 cup milk
  • 1 teaspoon chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 wash potatoes, and rub with oil.
  • 2 bake at 400 degrees for 1 hour or until done.
  • 3 cut potatoes in half lengthwise.
  • 4 carefully scoop out pulp, leaving shells intact.
  • 5 mash pulp; stir in butter, 1 1/2 cups cheddar cheese, sour cream, milk, parsley, salt, and pepper.
  • 6 stuff shells with potato mixture and sprinkle with remaining cheese.
  • 7 bake potatoes at 350 degrees for 20 minutes.
