True Blue Whipped Potatoes

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 3 lbs russet potatoes
  • 1 pint buttermilk
  • 1 bunch fennel, sliced thin
  • 1 onion, sliced thin
  • 1/2 lb bacon, diced
  • 6 tablespoons butter
  • 8 ounces blue cheese
  • salt
  • pepper

Recipe

  • 1 cook and rice the potatoes.
  • 2 add butter and whip until melted.
  • 3 add buttermilk and whip until smooth.
  • 4 carmelize onion and fennel and fold into potatoes.
  • 5 saute bacon drain and add to potatoes.
  • 6 fold in blue cheese.
