- 3 lbs russet potatoes
- 1 pint buttermilk
- 1 bunch fennel, sliced thin
- 1 onion, sliced thin
- 1/2 lb bacon, diced
- 6 tablespoons butter
- 8 ounces blue cheese
- salt
- pepper
Recipe
- 1 cook and rice the potatoes.
- 2 add butter and whip until melted.
- 3 add buttermilk and whip until smooth.
- 4 carmelize onion and fennel and fold into potatoes.
- 5 saute bacon drain and add to potatoes.
- 6 fold in blue cheese.
