Rabbit With Rosemary

Ingredients

  • Servings: 4
  • 1 rabbit
  • 1 onion, minced
  • 3 tablespoons oil
  • 2 garlic cloves
  • 1 sprig rosemary
  • 1 teaspoon thyme
  • 1 tablespoon parsley
  • 2 cups wine
  • 2 tomatoes
  • 4 potatoes, sliced
  • 1 teaspoon vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper

Recipe

  • 1 fry the rabbit and onion in oil.
  • 2 mash together the garlic, rosemary, thyme, and parsley; add to wine.
  • 3 pour over rabbit; add tomatoes.
  • 4 cover and cook 45 minutes at slow simmer.
