Ingredients

- 1 rabbit
- 1 onion, minced
- 3 tablespoons oil
- 2 garlic cloves
- 1 sprig rosemary
- 1 teaspoon thyme
- 1 tablespoon parsley
- 2 cups wine
- 2 tomatoes
- 4 potatoes, sliced
- 1 teaspoon vinegar
- 1 teaspoon salt
- 1 teaspoon pepper
Recipe
- 1 fry the rabbit and onion in oil.
- 2 mash together the garlic, rosemary, thyme, and parsley; add to wine.
- 3 pour over rabbit; add tomatoes.
- 4 cover and cook 45 minutes at slow simmer.
- 5 add potatoes.
- 6 cook 30 more minutes until rabbit is done.
