Truffled Mashed Potatoes

Ingredients
- Servings: 4
- 1/4-1/2 cup truffle oil
- 3 potatoes
- 24 ounces button mushrooms
- 1 large shallot
- 3 -4 tablespoons butter or 3 -4 tablespoons margarine
Recipe
- 1 boil potatoes.
- 2 chop up mushrooms and shallot.
- 3 saute shallot in truffle oil -medium heat.
- 4 add mushrooms- it will be a very wet, but that will go to the potatoes to keep them moist. if you use fancier mushrooms (portabello, shitake, crimini it will probably taste even better).
- 5 mash potatoes.
- 6 add in 3-4 tablespoons of butter.
- 7 add in the mushroom/shallot mixture and all the water it will be sitting inches.
