Truffled Mashed Potatoes

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1/4-1/2 cup truffle oil
  • 3 potatoes
  • 24 ounces button mushrooms
  • 1 large shallot
  • 3 -4 tablespoons butter or 3 -4 tablespoons margarine

Recipe

  • 1 boil potatoes.
  • 2 chop up mushrooms and shallot.
  • 3 saute shallot in truffle oil -medium heat.
  • 4 add mushrooms- it will be a very wet, but that will go to the potatoes to keep them moist. if you use fancier mushrooms (portabello, shitake, crimini it will probably taste even better).
  • 5 mash potatoes.
  • 6 add in 3-4 tablespoons of butter.
  • 7 add in the mushroom/shallot mixture and all the water it will be sitting inches.
