Thyme-roasted Potato W/ Balsamic Vinegar

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 6
  • 2 lbs small red potatoes, scrubbed, halved
  • olive oil
  • 4 tablespoons chopped fresh thyme
  • 2 teaspoons garlic salt
  • 1 1/2 cups balsamic vinegar
  • 3 tablespoons sugar

Recipe

  • 1 preheat oven to 400°f
  • 2 place potatoes in large bowl.
  • 3 generously coat potatoes with olive oil.
  • 4 sprinkle with 3 tablespoons thyme and garlic salt.
  • 5 toss to coat.
  • 6 coat large rimmed baking sheet with olive oil.
  • 7 arrange potatoes, cut side down, on sheet.
  • 8 roast potatoes until tender and golden brown, turning every 15 minutes and roasting about 45 minutes total.
  • 9 meanwhile, stir vinegar and sugar in heavy small saucepan over high heat until sugar dissolves.
  • 10 boil until liquid is reduced to 2/3 cup, about 10 minutes.
  • 11 mix in remaining 1 tablespoon thyme.
  • 12 transfer potatoes to plates.
  • 13 drizzle some balsamic syrup over potatoes.
