Smashed Sweet Potatoes With Dried Cranberries

- 4 large sweet potatoes, peeled and cut into 1/2-inch thick slices
- 1/2 cup apple juice
- 1/4 cup firmly packed light brown sugar
- salt
- fresh ground black pepper
- 1/3 cup dried sweetened cranberries
Recipe
- 1 add the sweet potato slices to a lightly oiled 4-quart slow cooker.
- 2 in a small bowl, mix together the apple juice and brown sugar; pour mixture over the potatoes.
- 3 season with salt and pepper.
- 4 cover and cook on low for 6 hours, until the potatoes are tender.
- 5 right before servings, smash the potatoes with a potato masher until smooth; fold in the cranberries.
- 6 serve hot.
