Smashed Bacon Potatoes

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 3
  • 1 lb potato, peeled, cubed and boiled
  • 1/4 lb lean bacon
  • 1 small onion, sliced thinly
  • salt and pepper

Recipe

  • 1 drain cooked potatoes and set aside.
  • 2 chop bacon and brown in frying pan.
  • 3 add onion and cook in bacon fat.
  • 4 when onions are translucent, dump potatoes on top in frying pan and mash in with a fork.
  • 5 turn potatoes until they are well-browned.
  • 6 you can peel potatoes before cooking or simply wash them for more nutritional value.
