New Crush Potatoes

Ingredients

- 2 1/2 lbs small waxy potatoes
- 1 teaspoon salt
- 1/3 cup chopped fresh mint
- 1/4 cup chopped fresh chives
- 1/4 butter
- salt and pepper
Recipe
- 1 place potatoes in saucepan. add boiling water and bring to a boil over high heat.
- 2 reduce heat to medium, cover and cook until potatoes are tender all the way through, 15-20 minutes.
- 3 drain potatoes. wipe pot clean and return potatoes to saucepan over low heat.
- 4 crush potatoes with a fork against the sides of the pan. mash in mint, chives and butter until potatoes are crushed into uniform pieces.
- 5 season to taste with salt and pepper.
