New Crush Potatoes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 1/2 lbs small waxy potatoes
  • 1 teaspoon salt
  • 1/3 cup chopped fresh mint
  • 1/4 cup chopped fresh chives
  • 1/4 butter
  • salt and pepper

Recipe

  • 1 place potatoes in saucepan. add boiling water and bring to a boil over high heat.
  • 2 reduce heat to medium, cover and cook until potatoes are tender all the way through, 15-20 minutes.
  • 3 drain potatoes. wipe pot clean and return potatoes to saucepan over low heat.
  • 4 crush potatoes with a fork against the sides of the pan. mash in mint, chives and butter until potatoes are crushed into uniform pieces.
  • 5 season to taste with salt and pepper.
