Neopolitan Potatoes

Ingredients
- 7 tablespoons olive oil
- 6 -12 depending on size red potatoes
- 1 (14 1/2 ounce) can diced tomatoes
- 1/2 cup grated parmesan cheese
- 2 teaspoons minced garlic
- 1/2 cup minced basil (or 2 tbsp. dried)
- 1/4 cup minced parsley (or 1 tbsp. dried)
- 2 teaspoons minced oregano (or 1 tsp. dried)
- 1 1/2 teaspoons sea salt
- 1 teaspoon pepper
Recipe
- 1 preheat oven to 350.
- 2 grease a 9 by 13 dish with about 1 tablespoon oil.
- 3 slice potatoes, you will want 6-8 cups.
- 4 place 1/3 of the potatoes into the dish.
- 5 drain the tomatoes and sprinkle 1/3 of the can over the potatoes.
- 6 drizzle about 2 tablespoons oil over the potatoes and tomatoes.
- 7 mix together the cheese, garlic, basil, parsley, oregano, salt, and pepper.
- 8 sprinkle 1/3 of the cheese mixture over the potatoes, tomatoes, and oil.
- 9 repeat layers twice.
- 10 cover and bake until potatoes are tender, about 50 minutes.
