Neopolitan Potatoes

Total Time: 1 hr 20 mins Preparation Time: 30 mins Cook Time: 50 mins

Ingredients

  • 7 tablespoons olive oil
  • 6 -12 depending on size red potatoes
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1/2 cup grated parmesan cheese
  • 2 teaspoons minced garlic
  • 1/2 cup minced basil (or 2 tbsp. dried)
  • 1/4 cup minced parsley (or 1 tbsp. dried)
  • 2 teaspoons minced oregano (or 1 tsp. dried)
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon pepper

Recipe

  • 1 preheat oven to 350.
  • 2 grease a 9 by 13 dish with about 1 tablespoon oil.
  • 3 slice potatoes, you will want 6-8 cups.
  • 4 place 1/3 of the potatoes into the dish.
  • 5 drain the tomatoes and sprinkle 1/3 of the can over the potatoes.
  • 6 drizzle about 2 tablespoons oil over the potatoes and tomatoes.
  • 7 mix together the cheese, garlic, basil, parsley, oregano, salt, and pepper.
  • 8 sprinkle 1/3 of the cheese mixture over the potatoes, tomatoes, and oil.
  • 9 repeat layers twice.
  • 10 cover and bake until potatoes are tender, about 50 minutes.
