Lentil Shepherd's Pie

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 5 potatoes
  • 3 tablespoons reduced fat margarine
  • 4 tablespoons water
  • 2 (19 ounce) cans lentils, rinsed and drained
  • 1 1/2 cups tomato sauce
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 1 tablespoon oregano
  • 1 tablespoon basil

Recipe

  • 1 boil potatoes for mashed potatoes.
  • 2 mash potatoes with water+margarine.
  • 3 preheat oven to 350 degrees.
  • 4 spray pan with non-stick cooking spray.
  • 5 saute onion and garlic.
  • 6 add lentils, tomato sauce and herbs and cook 15 minutes.
  • 7 pour lentils into a baking pan and cover with mashed potatoes.
  • 8 bake in oven for 20min.
