Farmers' Country Breakfast Casserole

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 24 ounces frozen hash brown potatoes
  • 8 eggs, beaten
  • 1 cup milk
  • 1 1/2 cups ham, cut up into 1 inch pieces
  • 8 ounces shredded cheddar cheese
  • 1/2 cup onion, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 in a 9 x 13 greased baking pan, layer potatoes, ham, onion and cheese.
  • 2 in a medium bowl, beat eggs; add milk, salt and pepper to eggs; beat well until thoroughly incorporated.
  • 3 pour over potato/ham layers.
  • 4 cover and refrigerate overnight.
  • 5 to prepare: preheat oven to 350 degrees; remove cover and bake for approximately 60 minutes.
