Farmers' Country Breakfast Casserole

Ingredients
- Servings: 6
- 24 ounces frozen hash brown potatoes
- 8 eggs, beaten
- 1 cup milk
- 1 1/2 cups ham, cut up into 1 inch pieces
- 8 ounces shredded cheddar cheese
- 1/2 cup onion, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 in a 9 x 13 greased baking pan, layer potatoes, ham, onion and cheese.
- 2 in a medium bowl, beat eggs; add milk, salt and pepper to eggs; beat well until thoroughly incorporated.
- 3 pour over potato/ham layers.
- 4 cover and refrigerate overnight.
- 5 to prepare: preheat oven to 350 degrees; remove cover and bake for approximately 60 minutes.
