Special Roasted Veggies!

Total Time: 1 hr 10 mins Preparation Time: 25 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 -3 medium russet potatoes, peeled and cubed
  • 2 medium carrots, peeled and sliced
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/4 tablespoon salt
  • 1/2 tablespoon pepper
  • 1 tablespoon paprika
  • 1 large zucchini, peeled and cut up into small pieces
  • 2 cloves garlic, minced
  • 1 cup mozzarella cheese (shredded)
  • fresh parsley (optional)

Recipe

  • 1 put potatoes and carrots in greased baking dish (13x9).
  • 2 drizzle with olive oil;add basil,oregano,salt, pepper,paprika and toss till coated.
  • 3 bake at 425 f degrees for about 20 minutes.
  • 4 add zucchini and garlic;stir up and return to oven for another 20 minutes or until veggies are tender.
  • 5 add the cheese and return to oven till melted and garnish with parsley if desired.
