Farmer's Casserole

Ingredients

  • Servings: 6
  • 3 cups hash brown potatoes (frozen, shredded)
  • 3/4 cup monterey jack cheese, shredded
  • 1 cup cooked ham, diced
  • 1/4 cup green onion, chopped
  • 4 eggs
  • 12 ounces evaporated milk
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt

Recipe

  • 1 place potatoes in an 8 inch square baking dish.
  • 2 sprinkle with cheese, ham, and onions.
  • 3 beat eggs, milk, pepper, and salt and pour over all.
  • 4 cover and refrigerate for several hours or overnight.
  • 5 remove from refrigerator 30 minutes before baking.
  • 6 bake uncovered at 350 for 55 to 60 minutes or until a knife inserted near the center comes out clean.
