Farmer's Casserole

Ingredients
- Servings: 6
- 3 cups hash brown potatoes (frozen, shredded)
- 3/4 cup monterey jack cheese, shredded
- 1 cup cooked ham, diced
- 1/4 cup green onion, chopped
- 4 eggs
- 12 ounces evaporated milk
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
Recipe
- 1 place potatoes in an 8 inch square baking dish.
- 2 sprinkle with cheese, ham, and onions.
- 3 beat eggs, milk, pepper, and salt and pour over all.
- 4 cover and refrigerate for several hours or overnight.
- 5 remove from refrigerator 30 minutes before baking.
- 6 bake uncovered at 350 for 55 to 60 minutes or until a knife inserted near the center comes out clean.
