Thai-styled Mashed Potatoes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 4 medium potatoes, peeled and each cut into small pieces
  • 1 ounce unsalted butter
  • 1/4 cup coconut cream
  • 1 teaspoon sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon vegetable oil
  • 1 small onion, chopped
  • 1 garlic clove, crushed
  • 1 small fresh green chile, chopped
  • 1 teaspoon freshly grated gingerroot

Recipe
