Traditional Mashed Potatoes

Ingredients

- 6 medium russet potatoes, peeled and cubed
- 1/2 cup warm soymilk (maybe more)
- 1/4 cup vegan margarine (maybe more)
- 3/4 teaspoon salt
- 1 dash pepper
Recipe
- 1 place potatoes in a saucepan and cover with water.
- 2 cover and bring to a boil; cook for 20-25 minutes or until very tender.
- 3 drain well.
- 4 add soymilk, vegan margarine, salt and pepper; mash until light and fluffy.
- 5 add more soymilk and vegan margarine, if needed, to get a creamier texture.
