Italian Sausage Frittata

Ingredients

- 1 lb italian sausage
- 1 small onion, chopped fine
- 1 (1 lb) bag hash brown potatoes
- salt
- 8 eggs
- parmesan cheese
- sliced tomato
Recipe
- 1 preheat oven to 375 degrees.
- 2 remove sausage from casings and saute with onion in a non stick skillet until done.
- 3 remove from pan.
- 4 in same pan with added oil, if needed, cook hash browns until golden brown.
- 5 season potatoes with salt.
- 6 add half of sausage mixture to potatoes.
- 7 with back of spoon, press potato mixture evenly onto bottom of skillet.
- 8 to remainder of sausage mix, add eggs and salt and mix with fork.
- 9 pour egg and sausage mixture over potatoes and cook for 3 minutes until egg mixture begins to set around edges.
- 10 place skillet in oven and bake for 10 to 15 minutes or until eggs are done.
- 11 thinly slice a couple tomatoes and arrange on top, then sprinkle with parmesan cheese.
