Italian Sausage Frittata

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 lb italian sausage
  • 1 small onion, chopped fine
  • 1 (1 lb) bag hash brown potatoes
  • salt
  • 8 eggs
  • parmesan cheese
  • sliced tomato

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 remove sausage from casings and saute with onion in a non stick skillet until done.
  • 3 remove from pan.
  • 4 in same pan with added oil, if needed, cook hash browns until golden brown.
  • 5 season potatoes with salt.
  • 6 add half of sausage mixture to potatoes.
  • 7 with back of spoon, press potato mixture evenly onto bottom of skillet.
  • 8 to remainder of sausage mix, add eggs and salt and mix with fork.
  • 9 pour egg and sausage mixture over potatoes and cook for 3 minutes until egg mixture begins to set around edges.
  • 10 place skillet in oven and bake for 10 to 15 minutes or until eggs are done.
  • 11 thinly slice a couple tomatoes and arrange on top, then sprinkle with parmesan cheese.
