Tomatoes Fribourg Style (tomates Fribourgeoises)

Ingredients

- 2 large tomatoes
- 2 tablespoons brown sugar
- 3/4 cup gruyere or 3/4 cup swiss cheese, finely grated
- 2 cups mashed potatoes (prepared, instant or leftovers)
- 1 green onion, chopped
- 1 dash pepper
- butter or margarine
Recipe
- 1 preheat oven to 350°f.
- 2 wash and halve tomatoes.
- 3 scoop out most of the flesh and discard liquid and seeds.
- 4 sprinkle each tomato half with 1/2 tablespoon brown sugar.
- 5 mix 1/2 cup grated cheese with mashed potatoes, parts of green onion, and pepper.
- 6 stuff each tomato with equal amounts.
- 7 dot each with a little butter.
- 8 place into a well-greased, shallow baking dish and bake for 10 minutes.
- 9 remove, sprinkle with remaining cheese, and bake for another 5 minutes.
- 10 remove, sprinkle with remaining green onion and serve.
