Tomatoes Fribourg Style (tomates Fribourgeoises)

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 large tomatoes
  • 2 tablespoons brown sugar
  • 3/4 cup gruyere or 3/4 cup swiss cheese, finely grated
  • 2 cups mashed potatoes (prepared, instant or leftovers)
  • 1 green onion, chopped
  • 1 dash pepper
  • butter or margarine

Recipe

  • 1 preheat oven to 350°f.
  • 2 wash and halve tomatoes.
  • 3 scoop out most of the flesh and discard liquid and seeds.
  • 4 sprinkle each tomato half with 1/2 tablespoon brown sugar.
  • 5 mix 1/2 cup grated cheese with mashed potatoes, parts of green onion, and pepper.
  • 6 stuff each tomato with equal amounts.
  • 7 dot each with a little butter.
  • 8 place into a well-greased, shallow baking dish and bake for 10 minutes.
  • 9 remove, sprinkle with remaining cheese, and bake for another 5 minutes.
  • 10 remove, sprinkle with remaining green onion and serve.
