Traditional Potato Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs small red potatoes or 1 1/2 lbs potatoes
  • 1 clove garlic
  • 1 sprig mint
  • 1 cup 35% cream
  • 1/4 cup mayonnaise
  • 1/2 cup chopped green onion
  • 1 tablespoon dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Recipe

  • 1 cook potatoes in salted water with the garlic and mint.
  • 2 drain, discarding garlic and mint.
  • 3 allow to cool.
  • 4 cut potatoes into quarters; place in a bowl.
  • 5 mix together dressing ingredients.
  • 6 pour over potatoes.
  • 7 refrigerate until ready to serve.
