The Best Sweet Potato Casserole

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 5 large sweet potatoes, cooked
  • 2 1/2 cups butter, melted
  • 1 cup granulated sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup shredded coconut
  • 1 cup brown sugar
  • 1 cup pecans, chopped
  • 2 tablespoons flour

Recipe

  • 1 lightly rub 9x13" cake pan or casserole dish with butter. in large mixing bowl, mash cooked sweet potatoes. add 1.5 cups melted butter, granulated sugar, eggs, and vanilla- beat until smooth. pour into prepared casserole dish. in medium bowl, mix coconut, brown sugar, remaining melted butter, pecans and flour. spread topping over potato mixture and bake uncovered 20-30 minutes at 350 degrees or until topping is brown.
