Skillet New Potatoes, Bell Pepper, And Bacon

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 10 small red potatoes, unpeeled (about 1 1/2 inch in size)
  • 6 slices bacon, diced
  • 1/2 cup chopped red bell pepper
  • 6 green onions, sliced (include some tender green tops)
  • 1/4 teaspoon salt (or to taste)
  • fresh ground black pepper

Recipe

  • 1 put potatoes in a saucepan over high heat; add water to cover.
  • 2 bring to a boil; decrease heat to med-low; cook until tender, about 20 minutes.
  • 3 drain and refrigerate until cold; then cut potatoes into quarters.
  • 4 in a big skillet over med-high heat, cook bacon 6-7 minutes, until crisp.
  • 5 drain on paper-towel lined plate, leaving 2 tablespoons bacon drippings in skillet.
  • 6 decrease heat to medium; add in potatoes, bell pepper, green onion, salt, and pepper; cook 5-6 minutes, until vegetables are tender and potatoes are browned—stir occasionally.
  • 7 add in bacon; cook 1-2 minutes longer; serve immediately.
