Lemon Potatoes

Total Time: 1 hr 15 mins Preparation Time: 20 mins Cook Time: 55 mins

Ingredients

  • Servings: 6
  • 2 lbs baking potatoes, peeled and cut into 1 inch cubes
  • 1 cup finely chopped onion
  • 3 tablespoons butter or 3 tablespoons margarine, melted
  • 1 tablespoon grated fresh lemon rind
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 cook potatoes in boiling water to cover 3 minutes; drain well, and set aside.
  • 2 saute chopped onion in butter in a large skillet over medium heat until tender.
  • 3 add lemon rind, lemon juice, salt and pepper and stir well.
  • 4 add potatoes and stir gently to combine.
  • 5 spoon potato mixture into a lightly greased 11x7 inch baking dish.
  • 6 bake uncovered at 375 for 50 minutes or until potatoes are lightly browned.
