Lemon Potatoes

Ingredients

- 2 lbs baking potatoes, peeled and cut into 1 inch cubes
- 1 cup finely chopped onion
- 3 tablespoons butter or 3 tablespoons margarine, melted
- 1 tablespoon grated fresh lemon rind
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 cook potatoes in boiling water to cover 3 minutes; drain well, and set aside.
- 2 saute chopped onion in butter in a large skillet over medium heat until tender.
- 3 add lemon rind, lemon juice, salt and pepper and stir well.
- 4 add potatoes and stir gently to combine.
- 5 spoon potato mixture into a lightly greased 11x7 inch baking dish.
- 6 bake uncovered at 375 for 50 minutes or until potatoes are lightly browned.
