- 5 tablespoons dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, chopped
- 1 teaspoon herbes de provence
- 2 lbs medium red potatoes, cut into chunks
Recipe
- 1 preheat oven to 425°f.
- 2 combine mustard, oil, garlic, and herbs in a large bowl.
- 3 add potatoes and toss to coat.
- 4 place on a lightly oiled baking sheet and bake 35-40 minutes or until tender.
