Greek Patates

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 3 lbs potatoes
  • 1/2 cup chopped yellow onion
  • 1/4 cup finely minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry oregano
  • 1/2 teaspoon basil
  • 1 cup fresh lemon juice
  • 1/2 cup vegetable oil
  • water (as needed)

Recipe

  • 1 preheat the oven to 400°f.
  • 2 in a large baking pan place the peeled and quartered potatoes (add enough potatoes so that they fill the pan up, 3/4-inch from the top).
  • 3 sprinkle on the onions, garlic, salt, pepper, oregano, basil, lemon juice, and vegetable oil.
  • 4 add enough water so that the potatoes are just covered.
  • 5 stir the ingredients together very thoroughly so that everything is well mixed.
  • 6 bake the potato mixture for 45 minutes.

  • 8 bake the potatoes for another 45 minutes, or until they are tender.
  • 9 remove the potatoes with a slotted spoon.
