Down On The Farm Sausage Bake

Total Time: 1 hr 15 mins Preparation Time: 45 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 6 medium potatoes, peeled and cubed (2 lb.)
  • 4 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3/4 cup milk
  • 2 egg yolks
  • pepper
  • 1 dash nutmeg
  • 2 tablespoons dried parsley flakes
  • 1 lb smoked sausage, sliced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon dried thyme

Recipe

  • 1 in a pot of boiling salted water, cook potatoes until tender.
  • 2 drain and place in a large bowl.
  • 3 mash with potato masher.
  • 4 add onions, garlic, butter, milk, egg yolks, pepper, and nutmeg.
  • 5 beat with electic mixer until light and fluffy.
  • 6 add in parsley, sausage and cheeses.
  • 7 spoon into a greased 2 quart casserole dish.
  • 8 sprinkle with thyme.
  • 9 bake, uncovered, at 400 degrees for 30 minutes or until just browned and heated thoroughly.
