Two Potato Roast

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

• cooking spray
• 1 1/2 lbs medium red potatoes, scrubbed,cut into 1 inch cubes
• 1 1/2 lbs sweet potatoes, scrubbed cut into 1 inch cubes
• 1/8 tablespoon olive oil
• 1 tablespoon chopped fresh rosemary or 1/2 teaspoon dried rosemary
• 1 teaspoon coarse salt (kosher)
• 1/8 teaspoon cayenne pepper

Recipe

• 1 preheat oven to 500 degrees f.
• 2 with cooking spray lightly coat 15 1/2x10 1/2x1-inch jelly roll pan.
• 3 add potatoes, oil, rosemary, salt and cayenne.
• 4 roast 20 minutes, until potatoes are tender and browned, stirring once.
