Stuffed Baked Potato-healthy

Ingredients

  • Servings: 1
  • 1 russet potato (scrubbed and baked)
  • 1 avocado, smashed
  • 1 carrot, shredded
  • 1/4 cup red onion, diced
  • 1 -2 tablespoon salsa
  • salt and pepper

Recipe

  • 1 slice the baked potato down the middle and smash it up a bit so soften the flesh and flatten out.
  • 2 salt and pepper to taste.
  • 3 top with smashed avacado, shredded carrots, diced onions, and salsa.
  • 4 dig in and enjoy!
