- 1 russet potato (scrubbed and baked)
- 1 avocado, smashed
- 1 carrot, shredded
- 1/4 cup red onion, diced
- 1 -2 tablespoon salsa
- salt and pepper
Recipe
- 1 slice the baked potato down the middle and smash it up a bit so soften the flesh and flatten out.
- 2 salt and pepper to taste.
- 3 top with smashed avacado, shredded carrots, diced onions, and salsa.
- 4 dig in and enjoy!
