Sonora Cheese-potato-green Chili Stew

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 medium onion
  • 1 tomato
  • 3 canned poblano chiles
  • 3 idaho potatoes (or your favorite type)
  • 1 tablespoon cooking oil
  • 1/2 quart milk
  • 1/2 quart water
  • 2 cups cheese, crumbly or shreddable
  • 1 teaspoon salt (approx. to taste)

Recipe

  • 1 boil milk and water together.
  • 2 dice poblano chilies and potatoes.
  • 3 chop tomato and onion in fine pieces.
  • 4 chop or separate cheese in shreds.
  • 5 heat cooking oil and sautee potatoes, onion, tomate and chilies.
  • 6 add water-milk mixture.
  • 7 salt to taste.
  • 8 simmer until potatoes are well cooked but not mushy.
  • 9 add the cheese.
  • 10 remove from stove and cover to keep hot until serving time-.
