Sonora Cheese-potato-green Chili Stew

Ingredients
- Servings: 6
- 1 medium onion
- 1 tomato
- 3 canned poblano chiles
- 3 idaho potatoes (or your favorite type)
- 1 tablespoon cooking oil
- 1/2 quart milk
- 1/2 quart water
- 2 cups cheese, crumbly or shreddable
- 1 teaspoon salt (approx. to taste)
Recipe
- 1 boil milk and water together.
- 2 dice poblano chilies and potatoes.
- 3 chop tomato and onion in fine pieces.
- 4 chop or separate cheese in shreds.
- 5 heat cooking oil and sautee potatoes, onion, tomate and chilies.
- 6 add water-milk mixture.
- 7 salt to taste.
- 8 simmer until potatoes are well cooked but not mushy.
- 9 add the cheese.
- 10 remove from stove and cover to keep hot until serving time-.
