Rosemary Roasted Potatoes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb small potato (12 to 14)
  • 2 tablespoons olive oil
  • 1/4 teaspoon ground pepper
  • 1 teaspoon chopped fresh rosemary sprigs or 1/2 teaspoon dried rosemary

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 bring a large pot of salted water to a boil.
  • 3 add potatoes and cook 5 minutes.
  • 4 drain well.
  • 5 spread potatoes in shallow roasting pan.
  • 6 drizzle with olive oil.
  • 7 season with salt to taste, pepper and rosemary, tossing gently.
  • 8 roast 20 to 30 minutes, or until potatoes are fork-tender.
