Rosemary Roast New Potatoes

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 2
  • 10 red-skinned new potatoes
  • 1/2 cup unsalted butter
  • 1/2 lemon, juice of
  • 1 teaspoon grated lemon zest
  • 2 teaspoons rosemary
  • salt and pepper

Recipe

  • 1 preheat oven to 375f.
  • 2 quarter potatoes and place in baking dish large enough to create a single layer.
  • 3 sprinkle on salt and pepper to taste.
  • 4 melt butter in a pan, with lemon juice and zest.
  • 5 pour butter mix over potatoes, covering as much as possible and sprinkle with rosemary.
  • 6 cook until slightly browned (approx 40 mins), turning in the butter mix occasionally.
