Rosemary Roast New Potatoes

- 10 red-skinned new potatoes
- 1/2 cup unsalted butter
- 1/2 lemon, juice of
- 1 teaspoon grated lemon zest
- 2 teaspoons rosemary
- salt and pepper
Recipe
- 1 preheat oven to 375f.
- 2 quarter potatoes and place in baking dish large enough to create a single layer.
- 3 sprinkle on salt and pepper to taste.
- 4 melt butter in a pan, with lemon juice and zest.
- 5 pour butter mix over potatoes, covering as much as possible and sprinkle with rosemary.
- 6 cook until slightly browned (approx 40 mins), turning in the butter mix occasionally.
