Patates Fourno Riganates (baked Potatoes With Oregano)

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • 4 large potatoes
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons lemon juice
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt

Recipe

  • 1 scrub potatoes under cool running water.
  • 2 place in a large, heavy saucepan with enough water to cover potatoes completely.
  • 3 boil potatoes over medium heat 20-25 minutes, or until potatoes are fairly soft but not mushy.
  • 4 drain in strainer, cool to room temperature, then peel.
  • 5 preheat oven to 350*.
  • 6 cut potatoes into slices about 1/4 inch thick and place them in a 1 quart baking dish.
  • 7 pour olive oil over potatoes. add lemon juice, oregano, and salt.
  • 8 stir very gently to keep potato slices from breaking.
  • 9 bake uncovered for 20 minutes.
