Oven Fries With Garlic And Parmesan Cheese

Ingredients

- 5 large idaho potatoes
- 3 tablespoons olive oil
- 1/3 cup parmesan cheese, cheese-grated
- 3 cloves garlic, finely minced
- 1/4 teaspoon crushed red pepper flakes
- salt
Recipe
- 1 preheat oven to 425 degrees.
- 2 set rack in middle of oven.
- 3 peel potatoes, quarter lengthwise and place in cold water to cover.
- 4 drain potatoes.
- 5 heat oil in shallow roasting pan over medium high heat.
- 6 when hot add potatoes in a single layer trying not to crowd to much.
- 7 brown and turn, brown other sides, about 9 minutes total.
- 8 remove from heat.
- 9 can be made several hours in advance to this point and kept at room temperature.
- 10 place in oven and bake until tender, about 25 minutes.
- 11 turn once, midway with tongs.
- 12 just before removing from oven toss with garlic, pepper flakes, cheese and salt.
- 13 return to oven a few minutes until cheese is melted.
