Oven Fries With Garlic And Parmesan Cheese

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 5 large idaho potatoes
  • 3 tablespoons olive oil
  • 1/3 cup parmesan cheese, cheese-grated
  • 3 cloves garlic, finely minced
  • 1/4 teaspoon crushed red pepper flakes
  • salt

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 set rack in middle of oven.
  • 3 peel potatoes, quarter lengthwise and place in cold water to cover.
  • 4 drain potatoes.
  • 5 heat oil in shallow roasting pan over medium high heat.
  • 6 when hot add potatoes in a single layer trying not to crowd to much.
  • 7 brown and turn, brown other sides, about 9 minutes total.
  • 8 remove from heat.
  • 9 can be made several hours in advance to this point and kept at room temperature.
  • 10 place in oven and bake until tender, about 25 minutes.
  • 11 turn once, midway with tongs.
  • 12 just before removing from oven toss with garlic, pepper flakes, cheese and salt.
  • 13 return to oven a few minutes until cheese is melted.
