Oven-baked Red Skin Potatoes

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 2 lbs red potatoes, cut as long wedges
  • 1/3 cup olive oil
  • 1 large onion, chopped
  • 1 teaspoon coarse kosher salt
  • fresh ground pepper

Recipe

  • 1 pre-heat oven to 400.
  • 2 combine ingredients in 9x13 roasting dish.
  • 3 bake uncovered, stirring occasionally, for 45-50 minutes or until potatoes are soft and golden brown.
