New Potatoes With Lemon Thyme Dressing

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 lbs new potatoes, unpeeled
  • 3 tablespoons wine vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoons dijon mustard
  • 1 shallot, minced
  • 6 scallions, part only, chopped (reserve tops for garnish)
  • 2 tablespoons chopped lemon thyme
  • 1/4 cup chopped parsley
  • 3 tablespoons vegetable oil
  • 3 tablespoons olive oil
  • salt & freshly ground black pepper
  • paprika
  • sliced scallion top

Recipe

  • 1 steam or cook potatoes until just tender.
  • 2 cool slightly and slice into quarters or chunks, and place in a serving bowl.
  • 3 combine dressing ingredients, whisking in oils gradually until thoroughly blended.
  • 4 pour dressing over warm potatoes, tossing gently until combined.
  • 5 sprinkle potatoes with paprika and scallion tops.
