New Potatoes With Basil Cream Sauce

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 2 lbs new potatoes, unpeeled and sliced
  • 2 tablespoons dry wine
  • 2 tablespoons finely chopped shallots (chives work well too)
  • 1 1/2 cups whipping cream
  • 1/3 cup fresh basil
  • 1/4 teaspoon salt
  • 1 dash pepper

Recipe

  • 1 cook potatoes in boiling salted water to cover until they can be easily pierced with a fork.
  • 2 drain, cover and put aside to keep warm while you make the sauce.
  • 3 combine wine and shallots in a large saucepan; bring to a boil and cook for one minute.
  • 4 add whipping cream; return to a boil; reduce heat and simmer 20 minutes, stirring frequently.
  • 5 stir in basil, salt and pepper; spoon sauce over potatoes and serve immediately.
