New Potatoes With Basil Cream Sauce

- 2 lbs new potatoes, unpeeled and sliced
- 2 tablespoons dry wine
- 2 tablespoons finely chopped shallots (chives work well too)
- 1 1/2 cups whipping cream
- 1/3 cup fresh basil
- 1/4 teaspoon salt
- 1 dash pepper
Recipe
- 1 cook potatoes in boiling salted water to cover until they can be easily pierced with a fork.
- 2 drain, cover and put aside to keep warm while you make the sauce.
- 3 combine wine and shallots in a large saucepan; bring to a boil and cook for one minute.
- 4 add whipping cream; return to a boil; reduce heat and simmer 20 minutes, stirring frequently.
- 5 stir in basil, salt and pepper; spoon sauce over potatoes and serve immediately.
