Mediterranean Frittata

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 small cooked potato, peeled
  • 1 green onion
  • 1 plum tomato
  • 8 eggs
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/3 cup crumbled feta

Recipe

  • 1 preheat oven to 350°f.
  • 2 light coat a 8in square pan with oil.
  • 3 grate potato.
  • 4 thinly slice onion diagonally.
  • 5 cut tomato into rounds.
  • 6 in a large bowl, whisk eggs with seasonings.
  • 7 add potato and onion.
  • 8 crumble in feta, stir until mixed.
  • 9 turn into baking dish and stir to evenly distribute ingredients.
  • 10 top with tomato rounds.
  • 11 bake, uncovered, in oven until middle is set, about 30-35 minutes.
  • 12 let stand 5 minutes then slice and serve.
