Mediterranean Frittata

Ingredients

- 1 small cooked potato, peeled
- 1 green onion
- 1 plum tomato
- 8 eggs
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/3 cup crumbled feta
Recipe
- 1 preheat oven to 350°f.
- 2 light coat a 8in square pan with oil.
- 3 grate potato.
- 4 thinly slice onion diagonally.
- 5 cut tomato into rounds.
- 6 in a large bowl, whisk eggs with seasonings.
- 7 add potato and onion.
- 8 crumble in feta, stir until mixed.
- 9 turn into baking dish and stir to evenly distribute ingredients.
- 10 top with tomato rounds.
- 11 bake, uncovered, in oven until middle is set, about 30-35 minutes.
- 12 let stand 5 minutes then slice and serve.
