Herbed Potatoes With Capsicum(bell Pepper)

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 large red capsicum, sliced thinly
  • 4 medium potatoes
  • 20 small fresh rosemary
  • 1/2 cup cheddar cheese, grated
  • salt
  • 1/2 teaspoon coarsely crushed pepper
  • cooking spray

Recipe

  • 1 cut the potatoes into thin slices only three-quarters of the way through, ensuring the slices are still attached at the base of the potato.
  • 2 line a baking tray with greaseproof paper.
  • 3 spray the cooking oil onto the potatoes.
  • 4 sprinkle salt, pepper and rosemary sprigs.
  • 5 bake in a pre-heated moderately hot oven for 50 minutes or until cooked.
  • 6 remove from the oven.
  • 7 push in the thinly sliced red capsicums in between the potato slices.
  • 8 sprinkle the cheese over it.
  • 9 bake the potatoes for another 5 minutes.
  • 10 serve hot.
