Twice Baked Cheddar Garlic Potatoes

Ingredients

- 1 head garlic
- 4 medium russet baking potatoes
- 3 tablespoons softened butter
- 1/3 cup sour cream
- 1 1/2 cups grated cheddar cheese
Recipe
- 1 preheat oven to 400°.
- 2 cut off and discard top third of garlic and wrap remainder in foil.
- 3 prick potatoes with a fork and bake with garlic on middle rack of oven for 45 minutes.
- 4 remove garlic to cool and continue baking potatoes until tender, about 20 minutes more.
- 5 squeeze garlic cloves into a bowl and discard skins.
- 6 stir in butter, sour cream and 1 cup of the cheddar cheese.
- 7 cut potatoes lengthwise, removing top fourth of each potato and discard.
- 8 scoop out potatoes and add to cheese mixture.
- 9 mash with a fork to combine.
- 10 season with salt and pepper to taste and divide among potato shells.
- 11 arrange potatoes in a small baking pan and sprinkle with remaining 1/2 cup of cheese.
- 12 bake until heated through, about 15 to 20 minutes.
