Ingredients

- 1 teaspoon salt
- 1 lb purple potatoes or 1 lb russet potato, peeled
- 1/4 cup milk
- 2 tablespoons butter
- salt and pepper
Recipe
- 1 fill a large saucepan two-thirds full with water.
- 2 add the salt.
- 3 cut the potato in half length-wise.
- 4 holding a potato half cut-side down, slice it lengthwise into one-inch slices.
- 5 bow hold the slices and cut across them in the opposite direction to make one-inch pieces.
- 6 add the potato to the pan.
- 7 repeat with the remaining potatoes.
- 8 bring the water to a boil and boil the potatoes, uncovered, until tender, about 10 minutes.
- 9 drain potatoes into the colander.
- 10 return the potatoes to the pan.
- 11 mash with a potato masher.
- 12 add the milk and butter.
- 13 continue to mash until the butter and milk are mixed.
