Tuscan Potatoes (mint And Garlic Roasted Potatoes)

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 2
  • 1 lb small red potato (2-4 potatoes)
  • 6 garlic cloves, peeled & finely minced (1 tablespoon)
  • 1 teaspoon olive oil
  • 1/4 cup fresh mint, minced & stemmed
  • 1/4 teaspoon kosher salt (or to taste) or 1/4 teaspoon sea salt (or to taste)
  • pepper, to taste

Recipe

  • 1 preheat oven to 350°f.
  • 2 scrub potatoes and halve or quarter any that are larger than bite-sized.
  • 3 combine all ingredients in a large heavy duty zip lock plastic bag and shake well to coat potatoes.
  • 4 place in a shallow roasting pan (lined with foil for easy clean up), and roast for 1 hour.
  • 5 taste and adjust the seasonings.
  • 6 serve hot or at room temperature.
