Tortilla Campesina (potato Pudding)

Ingredients

- 4 onions
- 100 g smoked bacon, chopped
- 1 teaspoon garlic powder
- 1 kg boiled potato, , with skin and cut into dice

- 2 teaspoons paprika

- 12 eggs
Recipe
- 1 chop the onions and saute them in a some oil.
- 2 with the bacon.
- 3 mix the rest of the ingredients and seasonings and add the onion and bacon mixture.
- 4 add the beaten eggs, and pour the mixture into a greased oven-proof baking dish.
- 5 cook in a medium oven until the eggs are set and the top is a bit browned.
