Stuffed Baked Sweet Potatoes

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 6
  • 6 medium sweet potatoes
  • 1/2 cup orange juice
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1 (8 ounce) can crushed pineapple, drained
  • 1/2 cup chopped pecans

Recipe

  • 1 preheat oven to 375.
  • 2 bake sweet potatoes for 1 hour or until tender.
  • 3 cut 1 inch strip lengthwise from top of the potato.
  • 4 carefully scoop pulp from shell.
  • 5 in a large bowl, combine sweet potatoe pulp, orange juice, butter and salt.
  • 6 beat until fluffy.
  • 7 stir in pineapple.
  • 8 stuff shells with the mixture.
  • 9 sprinkle with pecans.
  • 10 bake at 375 degrees for 10 minutes.
